Courtney’s Creamed Spinach

  • 1 Bag Baby spinach, chopped
  • 1/2 Lg onion, diced small
  • 2 Cloves garlic, diced small
  • Generous grating of nutmeg
  • 4 Tbsp sour cream
  • 1/4 Cup freshly grated parmesan cheese
  • Salt ad pepper
  • 1 Tbsp butter
  • 1 Tbsp extra virgin olive oil

Melt butter and olive oil together in a frying pan with high sides over medium heat. Add onions and sauté till translucent add garlic, salt and pepper till garlic softens. Add Spinach and sauté till spinach is completely wilted.

Lower heat to low and add sour cream, nutmeg and parmesan. Stir to incorporate. Do not let sour cream come to a boil or it will break up.

Taste, add more salt and pepper to taste.
